Dail’I Blend is a specialist yeast based mix for making the finest crunchy baguettes, classic ciabatta and focaccia all from one sachet. The mix combines the highest quality dried yeast for optimum fermentation and specific functional ingredients to offer great dough processability.

Fantastic rich taste and aromas are achieved through the combination of powdered wheat sourdough and the direct fermentation. It’s a perfect solution to offer a range of European breads by just adding flour and water to one sachet, add inclusions and toppings to create your unique style products.

PACKAGING
4.8kg (16 x 300g a sachet) in a cardboard box.

SHELF LIFE
12 months in the original packaging. This product keeps all its properties when stored in a cool and dry place (25°C max).

For 30 baguettes of 340g 

Dail’I Blend 5 % 300g
Flour type 55 100 % 6,000g
Water 68 % 4,080g
Total 10,300g

Bread making process:

  • Mixing: Spiral mixer: 5 min at 1st speed +/- 2 min at 2nd speed.
  • Dough temperature: 28°C +/- 1°C.
  • First fermentation: 60 min at room temperature.
  • Dividing: 340g pieces (indicative).
  • Moulding: Twisted / Long.
  • Second fermentation: 50 min at 28°C.
  • Cutting.
  • Baking: 25 min at 230°C.
