Trad’I Blend is a specialist yeast based mix for making traditional and rustic style breads. The mix combines the highest quality dried yeast for optimum fermentation and specific functional ingredients to offer great dough processability.

Fantastic intense flavour and aromas are achieved through the combination of dry wheat sourdough and direct fermentation. It’s a perfect flexible solution to make farmhouse breads, wheat breads and rustic style breads through one sachet.

Be creative and add seeds and inclusions to create your own unique bread range.

5.76kg (16 x 360g a sachet) in a cardboard box.

SHELF LIFE
12 months in the original packaging. This product keeps all its properties when stored in a cool and dry place (25°C max).

Flour type 55 100 % 6,000g
Water 75 % 4,500g
Multigrains* 20 % 1,200g
Total 12,060g

*Sesame 240g, Pumpkin 240g, Sunflower 240g, Flaxseed 240g, Millet 240g.
Toast grains in oven during 5 minutes at 230°C.

Bread making process:

  • Mixing: Spiral mixer: 3 min at 1st speed +/- 3 min at 2nd speed.
  • Dough temperature: 26°C +/- 1°C.
  • First fermentation: 45 min at room temperature.
  • Dividing: 500g pieces (indicative).
  • Relaxing: 15 min at room temperature.
  • Moulding: Round / Long / Triangle.
  • Second fermentation: 45 min at 35°C.
  • Cutting.
  • Baking: 35 min at 240°C.
